Miso-Glazed Salmon
I was cleaning out my fridge recently & realized I had 2 jars of unused miso paste. I bought white & red miso paste about 2 years ago to make miso soup. I haven't used it since & was glad to find another delicious way to incorporate it into my family's diet.
Ingredients:
2 Tbsp brown sugar
2 Tbsp soy or tamari sauce (I used Trader Joe's Reduced Sodium Soy Sauce)
2 Tbsp hot water
2 Tbsp miso paste (I used Westbrae Natural Organic Mellow Red Miso Soybean Paste)
4 6-ounce wild salmon steaks, about 1-inch thick
Preheat oven to 350 degrees F.
Combine the first 4 ingredients, stirring with a whisk.
Spoon the mixture onto the fish.
Bake uncovered for about 20" (take care not to overcook the fish).
